With limited ingredients and a craving for something comforting, we whipped together sweet potato, peanut butter, and cocoa… and magic happened.

Sweet Potato Fudge Brownies

Ingredients (Serves 8)

  • 1 ½ cups cooked sweet potato

  • ½ cup peanut butter

  • ¼ cup almond flour

  • ¼ cup cocoa powder

  • ½ cup maple syrup

  • 1 tsp vanilla extract

  • ¼ tsp baking soda

  • ¼ tsp baking powder

  • Pinch of sea salt

  • ½ cup chocolate chips (plus extra for sprinkling on top)

Instructions

  1. Roast the Sweet Potatoes
    Wrap whole sweet potatoes in foil and roast at 400°F (200°C) for about 45 minutes, or until completely soft. Let cool, then peel.

  2. Preheat Oven
    Set oven to 350°F (175°C). Line a 9x9-inch baking tray with parchment.

  3. Mix the Ingredients

    • In one bowl, combine all dry ingredients: almond flour, cocoa powder, baking soda, baking powder, and sea salt.

    • In another bowl, mix the wet ingredients: mashed sweet potato, peanut butter, maple syrup, and vanilla.

    • Combine wet and dry mixtures until smooth.

  4. Add Chocolate Chips
    Stir in the chocolate chips, then pour the batter into the lined tray. Sprinkle extra chocolate chips on top.

  5. Bake
    Bake for 25–30 minutes, until set but still slightly soft in the center.

  6. Cool & Serve
    Allow brownies to cool completely, then chill in the refrigerator.
    These brownies are extra moist and fudgy—best served cold with a dusting of cacao.
